Ashgourd vegetable in Curd (कोहळ्याची पचडी)

Ashgourd (कोहळा) – The cool vegetable
Scientific name (Benincasa hispida) family cucurbitaceae)

Ashgourd has a very high water and fiber content. It is a rich source of vitamin B & C. Its alkaline properties help combat acidity & purify bladder. It is claimed to prevent formation of ulcers in stomach and intestine. As per Ayurveda it is used to treat many disorders.

Ashgourd vegetable in Curd (कोहळ्याची पचडी)

Ingredients :

  • Ashgourd -250 GMs
  • Curd – 1 cup
  • Oil
  • Musterd seeds- 1 teaspoon
  • Curry leaves
  • Turmeric powder- 1/4th tea spoon
  • Asfoetida- a pinch
  • Salt as per taste

Method :

  1. Take Ashgourd 250gms
  2. Peel off the skin.
  3. Cut it into medium size pieces. ( Remove matured seeds )
  4. Add oil to a Kadai
  5. Add muster seeds and allow them to pop.
  6. Add curry leaves, asafoetida & turmeric powder .
  7. Add Ashgourd pieces. Mix well.
  8. Sprinkle little water & cook on medium heat.
  9. Add salt. Sprinkle little water & cover with lid.
  10. Turn off the heat when the pieces become transparent.
  11. Allow it to cool
  12. Add finely cut coriander leaves & mix well.
  13. Add curd & mix well.
  14. Serve fresh.

This cool vegetable with slightly sour test refreshes taste buds in summer.
